Autumn is my favourite time of year but we all struggle with the seasons changing especially the dark evenings. We are all sitting at our desks with a hot water bottle daydreaming of getting away to the sun. Well Jet2 are making it easier to escape the winter blues by adding more flights from Bristol airport this winter. To celebrate Jet2 invited me to Little Kitchen cookery school in Totterdown to celebrate more flights to the canery islands but learning how to cook authentic tapas dishes.
I had always wanted to go to a cookery school and as I’ve never been to Spain or the Canary Islands I was super excited to get stuck in and learn. Upon arrival, I was greeted with some of the best red wine I’ve ever had (note: If you ever see a bottle of Yaiza Tinto, grab it).
Little Kitchen Cookery school is a wonderful space near where I live in Bristol. Each workspace is prepared for you with all the equipment and ingredients alongside the menu for our day. They run a range of classes but in true tapas style, we had some ready-to-eat nibbles there. The tapas with manchego cheese and feta stuffed peppers was a fabulous way to start. Keeping the tapas traditions we were cooking one dish at a time and eating them as we went which made the social element of the day flow well.
All guided by our wonderful teacher who explained every step so well and answered any silly questions I had. Pictured are my successful dishes chorizo in red wine and papas arrugadas with mojo verde and mojo Rojo sauces. Such simple but beautiful dishes that I’ve recreated since and love. However, remember that amazing red wine I mentioned earlier? It was flowing and the cheese and leek croquetas were too complex for my tipsy team. Even though they weren’t perfect I still got a few top tips on creating roux and I got to take a copy of the full recipes home to keep practicing.
I had the best day filled with food, learning so much about the canary Islands and Spanish cuisine, I’m dreaming of a holiday even more than ever. I am an Italian girl at heart having only really travelled to Italy so to have me searching for flights to the Spanish Islands is a huge success.
